If you’ve followed my crowing about our family’s Disney Side Multi-Generational At Home Celebration, you know that we will be toasting the clan matriarch. My mom is turning 85 this month! Thus, every party snack, appetizer, main dish and libation was chosen with her in mind. We’ve taken her all-time favorites and given them the Mickey Mouse treatment. So, I thought I would highlight one of her special guilty pleasures- a Mimosa. Below I share my magical recipe and tutorial. Use it for your next MickeyMouse brunch or fiesta!
** I received free products from Disney Parks and Mom Select to host these Disney Side @Home Celebrations. My thoughts (and imagination) are my own!
Mickey Mouse Mimosa
– Brut champagne
– Freshly squeezed orange juice
– Grenadine
Fill champagne flute 1/3 full of champagne. Followed with another 1/3 of orange juice, and top with 1 teaspoon of grenadine.
Magical Garnish
– Fresh strawberries
– Black melting chocolate
Melt chocolate in the microwave. Heat for 30 second increments at half power, stirring after each heating. Once smooth and fully melted set aside. Do NOT overheat.
Wash and dry strawberries. Carefully trim the stem off each and cut a small wedge (or mouse ears) into the top. Dip each berry into the melted chocolate, coating the top 1/3. Set on waxed paper for 15 minutes or more. Cut a small slit into the bottom of each strawberry. Lastly, place it onto the filled champagne flute. Like MAGIC.

This is fabulous and so creative!! While I'm not a big mimosa fan (I don't like champagne), I love the idea of one with sparkling cider! I would have never thought of that!!
